I have just completed my VMware 5 training and spoke to the tutor about this. He recommeded leaving Active Directory Domain controllers to time sync with ACtive directory (and the hieracrchy that exists with servers and desktops using time) and NOT to use VMware Tools to sync with the ESXi Hosts.

The hosts themselves I have NTP running and point to an external time source (2.us.pool.ntp.org etc) in any case.
